UEL executive chef declared UK street food champion

The University of East London's executive chef has been declared the Aramark UK Street Food Champion 2020.
The victory for the University's Nick Sharma (pictured left) was announced at the Aramark UK Street Food Awards on Thursday 20 February at chef Paul Ainsworth's popular Mahé Cookery School in Padstow, Cornwall.
Aramark is a customer service business who provide top-quality catering to the University of East London.
Nick faced competition from other chefs including the University of Hertfordshire, JP Morgan and military headquarters Northwood HQ, but ultimately came out on top with his dish, Bird & Bun, which consists of light and fluffy Brazilian-style doughnuts, stuffed with chicken and a flavoursome Seitan stir-fry, served alongside a punchy Chimichurri slaw.
My concept is about using numerous regional and national chicken recipes packed full of flavour from all over the world, all served within the medium of a savoury, vegan doughnut.
"Finding those unheard of, yet well-loved recipes from far-flung countries, makes the dish exciting, vibrant, on trend and innovative, and it uses flavours and techniques that I have mastered from both my home and professional life,"
Nick Sharma, UEL executive chef and UK street food champion, said.
Nick has worked in catering for 19 years and utilises his time to come up with new flavours and dishes. Taking part in the Street Food competition allowed him to put his skills to the test, make new friends and come up with a new dish.
Nick has catered for other companies including Warner Brothers, Tower of London, Hampton Court Palace, Kensington Palace, ITV and Barclays.
His winning Bird & Bun dish will be coming to the University of East London soon.
